butternut squash/chipotle chili
(just a reference post from the one i’m making on my IG story rn, feel free to modify as desired ofc)
ingredients:
- 2 tbps cooking fat (i used ghee)
- 1 medium yellow onion
- 1 medium red onion
- 1 stalk of celery
- 2 carrots
- at least 8 cloves of garlic
- 8-10 sage leaves
- 1 red bell pepper
- 2 lbs lean ground turkey
- spices/seasonings: salt & pepper, smoked paprika, fennel seed, cumin, chili powder, cayenne, garlic powder, cinnamon
- 1 8oz can tomato paste
- 2 8oz cans tomato sauce
- 1 28oz can crushed tomatoes
- at least 8oz chicken or beef broth
- 1 13oz can, chipotles in adobo sauce
- 1 7oz can, chipotle sauce
- 1 medium butternut squash, peeled and diced into ~1 in cubes
to prepare:
- chop onions, celery, and carrots. heat dutch oven (or other heavy-bottomed pot) until hot to the touch (a few minutes on medium high should do it), then add ghee/oil. after a minute or so, add the onions, celery, and carrots.
- while those cook (about 3-4 mins), chop garlic, sage, and bell pepper, then add to the veggie mix. cook for another 2-3 mins.
- add ground turkey, and spices/seasonings as desired. i went heavy on the cumin, chili powder, garlic powder, salt, and cayenne, and a bit lighter on the fennel and cinnamon. would generally encourage ‘go big or go home’ as a mantra here with everything except those last two.
- when the turkey’s browned, mix in tomato paste. cook for 2-3 minutes.
- while that’s cooking, remove chipotle peppers from adobo sauce/can and chop those lightly.
- add tomato sauce, crushed tomatoes, and broth to the pot, then the chopped chipotle peppers (plus the remaining sauce from the can they came in). add separate chipotle sauce can too.
- after mixing, add chopped butternut squash.
- reduce heat to low and simmer for 20 minutes, then taste. adjust seasonings as needed.
- simmer for another hour or so, then serve with desired toppings (usually i do jalapenos, red onion, etc).
notes:
- obviously you can modify anything however you see fit but one thing i’d def suggest is adding black beans (at the same time as the squash) if you’re not doing whole 30 like i am this month
- relatedly, this is great when served with some sour cream and cheese on top or with cornbread
- sometimes i also start the recipe by cooking some bacon in my dutch oven, setting the cooked strips to the side, and cooking the veggies in the leftover grease. if you wanna do that, crumble the bacon after and add it in right before serving
- oh also THIS MAKES A LOT sorry idk how to cook for less than like 8 ppl at a time
